摘要辣椒素的化学组成主要为辣椒碱和二氢辣椒碱。

The chemical composition of Capsaicinoids is capsaicin and dihydrocapsaicin .

结果表明，辣椒总碱中辣椒碱及二氢辣椒碱的含量约为58%和30%，方法的平均加样回收率分别为98.2%和97.6%。

The contents of capsaicin and dihydrocapsaicin in samples were 58 % and 30 % , the recoveries were 98 2 % and 97 6 % for capsaicin and dihydrocapsaicin respectively .

本法测定原料辣椒果皮粉中辣椒碱类物质（辣椒碱+二氢辣椒碱）的含量为0.286%，辣椒籽粉中辣椒碱类物质的含量为0.122%，这与文献报道的基本相一致。

The content of capsaicinoids ( capsaicin and dihydrocapsaicin ) in the pericarp and seed of the material is 0.286 % and 0.122 % respectively , which is according to the reports basically .
